Consumer trends under discussion

Director of the Italian Center for Sensory Analysis spoke on the subject during a visit to PUCRS

How do consumers think and act in view of so many products available? A lecture on Consumer Science – Consumers’ relationships and trends in the food and beverage market were offered on May 22 to Nutrition, Gastronomy and Food Science and Innovation students as well as the general audience. The event was held through a partnership between these programs and the Technological Management Agency of PUCRS with the Italian Center for Sensory Analysis.

The guest, Professor Lucia Bailetti, Director of the Italian Center, talked about the studies in the area and the most modern cases in practice in Europe. Consumer science and neuromarketing are intended to provide alternatives to better communicate products for different markets and find solutions by identifying emotions and expectations of different consumers.

The opening of the lecture was made by the Sensory Manager of the Italian Center of Sensory Analysis, Marcelo Vargas, who also serves as the Director of the Brazilian Association of Sommeliers/Rio Grande do Sul and a food and beverage consultant.

Lucia Bailetti teaches at the Universities of Verona, San Raffaele (Rome) and Macerata, relies on a solid experience of 20 years in the areas of sensory analysis and consumer science, and has also worked for multinationals in the areas of foods and beverages.
